Filet of Beef Le Chateau

750 g beef for roasting
25 g butter
1 onion
2 rashers of bacon
1 egg
2 tablespoon of breadcrumbs
2 tablespoons chopped parsely
salt, pepper
250 g button mushrooms

Melt butter in pan, saute peeled and finely- chopped onion with bacon and mushrooms over low heat until golden brown.  Combine bacon and onion, mushroom mixture, egg, breadcrumbs, parsley, salt and pepper, mix well.

Cut a pocket in the middle of the fillet with small sharp knife.  Cut almost ot the edges inside the fillet, be careful not to cut through;  make sure the opening of the pocket is as small as possible.  Press filling firmly into pocket.  Put meat in greased baking dish, bake in moderate oven for 1 hour or so depending on oven and size of roast.  Slice meat put into serving dish with your favorite vegies and gravy if you like.  Check out my homemade gravy under label sauces/gravies.  My daughter said "it is the bestest meat ever".  My hubby went up for seconds and so did my son!
