Pumpkin & rocket salad

Ingredients




1/2 butternut pumpkin
150 g rocket
2 tbls balsamic vinegar
2 tbls oil
3 tbls brown sugar


Method


1. Preheat oven to 200c
2. Coat pumpkin in vinegar, oil and sugar in bowl.
3. Transfer to oven baking dish.
4. Cook pumpkin for around 20 mins or until tender.
5. Put in bowl with rocket and mix.


That's it! Tasty yet simple.
