1 x 700g Stromboli tomato pasta sauce
2 tsp beef stock oregano
2 x garlic cloves
1 onion 1 tblsp olive oil
1 eggplant
1. Cut onions finely
2. Slice eggplant lengthways and then cut into strips.
3. Place oil into saucepan
4. Saute onion and garlic
5. Add mince and cook until brown
6. Add eggplant
7. Add sauce
8. Add beef stock powder and oregano
9. Leave sauce to cook on low heat for 1 hour.

This has quite a lot of carbs and calories not a good idea to eat very often we usually do this type of meal once a fortnight.
