Topside Roast Beef with spinach, garlic stuffing

Ingredients




1kg of topside beef
3 garlic cloves
250 g spinach
parsley (handful)
1/2 cup of breadcrumbs
1 egg
bit of parmesan (optional)
salt and pepper to taste


Method


1. Preheat oven to 200c
2. Put all ingredients except for beef into blender. Blend until all mixed.
3. Cut open beef lengthwise but not completely to end, so it is flat.
4. Spoon mixture onto the middle of beef.
5. Roll in together and fix with string.
6. Put into baking dish, pour a little oil over top and extra salt.
7. Bake in oven for approximately 1.5 hours
