Chicken pancetta with basil

4 chicken breast
300 g pancetta
basil
bacon
lean chicken sausage meat (sweet chilli)
1 litre chicken stock




Method


Beat chicken breast until nice and thin. Put chicken breast on a couple of pancetta slices. Add chicken sausage on top and spread to chicken. Add basil leaves and bacon on top. Roll chicken breast including the pancetta. Cook in fry pan with 2 tbls oil. Once brown add 1 litre chicken stock. Cook for around 1/2 hour with lid if you have one or a bit longer if not.

The score from family were: 10/10 from children and 2/10 from hubby (he did not like bacon in the stuffing)
