Chicken and fried rice

1.5 kg chicken pieces
1/2 cup of flour
1tbsp chicken seasoning
dried oregano
salt and pepper
1 tbsp olive oil


Place flour,seasoning, salt and pepper into bowl. Add chicken and coat. Place in baking dish and pour oil over top with sprinkled oregano on top. Bake for about an 1 hour on 150c fan forced.

The skin comes out nice and crispy. Kids love it!

Fried rice

2 cups of rice
3 cups of water
vegies of your choice
2 tbsp of soy sauce
1 tbsp of oyster sauce

put 2 cups of rice and water in a microwave proof container microwave for 10 minutes. In fry pan add 1 tbsp of oil and add vegies fry for 2 to 3 minutes and then add rice. Add soy and oyster and stir.
