2 tblsp olive oil
1 large brown onion, finely chopped
1 carrot, peeled, diced
1 celery stalk, diced
3 small zucchini, diced
6 cups chicken stock
150 g small pasta
shaved parmesan cheese to serve
Meatballs
2 slices white bread, crusts removed
150 g chicken mince
50 g shaved ham, finely chopped
1 egg yolk
1/4 cup grated cheese
Heat oil in pan, brown onion add all vegetables cook for 5 mins and then add chicken stock. Meanwhile make up meatballs with the meatball ingredients. I cook meatballs in oven for around 5 mins or until brown and then I pop them in the soup. Cook pasta in boiling hot water. Add pasta to soup and viola!!! My children love this soup and it's pretty good for you. :) enjoy!
