Fried Rice

Serves 4

2 eggs
1 cup long grain rice
1 carrot grated
frozen peas
1 red capscium
1 tblsp of soy sauce
2 shallots
2 bacon rashers
Olive oil or peanut oil
2 tsp oyster sauce (optional)

Make an omelette with eggs and then slice, put aside. 

Cook rice according to instructions on packet or for a quicker alternative, add rice to a microwave proof bowl with one and a half cups of water.  I cook for 12 minutes but all microwaves are different.

Chop bacon and all vegetables.  Add oil and fry bacon for 1 minute then add capscium, frozen peas and carrot, cook for 3 minutes.  Add shallots and rice toss through and cook for a further two minutes.  Add soy sauce, oyster sauce, stir through. 

*You can add any vegetables this was just my variations.  Also frozen vegetables are an alternative when fridge is not stocked with many vegetables.  I keep some always in my freezer just in case. :)
