Crumbed Cornflake Chicken strips

2 x chicken breast
2 eggs, slightly beaten
1 tsp chicken stock
garlic and onion powder (optional)
3/4 c. cornflakes crumbs (crush cornflakes to make crumbs)



Wash and dry chicken. Cut Chicken into strips.  Add stock, garlic and onion powder  to 2 eggs in bowl  Dip chicken in egg mixture .Roll chicken in cornflakes crumbs mixture. Place in single layer, of a well greased shallow baking pan. Bake at 150c for 45 minutes or until tender. Do not cover or turn chicken while baking.

I served this with coucous (see recipe under vegetarian) and fennel salad (see recipe)
